Stuffed Cubanelle Peppers

 The very first time I had the privilege of eating a Stuffed Cubanelle Pepper was while I was visiting my sister back in our hometown of Niles, Ohio.  She took me to this little Italian place that she frequented.  Given that I love stuffed peppers, we ordered these up as an appetizer.  A menu item for me was born that day.  I’ve played around with this recipe over the years, but I really like the latest version.  I hope you enjoy them as much as I do.
Mild Italian Sausage, diced peppers, minced garlic and Marsala wine. Add some Parmesan cheese and we are rocking.

Sweat the peppers in a 350 degree oven for 20 minutes, turning once and then let them cool.

Lay a bit of marinara on the bottom of a prepared baking dish, and stuff your peppers with the sausage goodness.

Smother with an abundance of fresh grated Mozarella cheese and bake at 350 degrees until the cheese is melted and the sauce is bubbly.

4-8 Good sized cubanelle peppers (the quantity will depend on how many you are wanting to feed and if you want leftovers to snack on)

1 LB of fresh ground Mild Italian sausage.

1/4 cup of Marsala Wine

2 Cloves crushed garlic

1 TBSP olive oil

Freshly grated Parmesan cheese

Shredded Mozarella

Your favorite marinara sauce

Preheat your oven to 350 degrees

Remove the tops and seeds from the peppers.

Lightly brush the peppers with a little olive oil and place on a baking sheet in your preheated oven for 10 minutes, turn the peppers and go for 10 more minutes.  Remove and allow them to cool.

In a large skillet, over medium heat, brown the sausage, making sure to chop it up as much as possible, until no longer pink.  Drain off the excess fat, add in the crushed garlic, Marsala wine and allow it to reduce. Stir in the grated Parmesan.  Carefully stuff the peppers and place them in a casserole dish that has been sprayed with cooking spray.  Cover the peppers with the marinara and shredded mozzarella.   Bake at 350 degrees until the cheese is melted an bubbling.
